Homemade Momo Masala

MoMo masala  is a mixture of  spices which gives Nepali momos its distinct flavour. If you're preparing momos regularly, the masala provides a convenient way to spice up your momos without the fuss of preparing multiple ingredients in each instance.


Ingredients

½ tbsp whole black pepper 
½ inch dry Ginger 
9 cloves 
6 Cardamoms
9 Dried Chilies 
2 bay leaves (make small pieces) 
2 inches Cinnamon sticks (make small pieces)  
½ tbsp. Mustard seeds 
1 small sized Nutmeg (break into small pieces)
½ tbsp Fenugreek seeds 
1 tbsp Coriander seeds 
½ tsp Salt
½ tsp Turmeric Powder 

Instructions

Add all the dry ingredients except salt and turmeric powder into a sauce pan.
Roast the ingredients in medium flame for 2 minutes, stir often to make sure the ingredients do not burn.
Blend the roasted ingredients in a blender into fine powder.
Take the powder, mix in salt and turmeric.
Store for use in your MoMo!
