Aloo achar

potato pickle


Aloo achar is a type of pickle made with potatoes. Pickle is an integral part of Nepali cuisine with lot of variations which consists of different flavour, textures and ingredients, depending on where/when it is served.

Ingredient

6 boiled potatoes
3 tablespoon lemon juice
5 small green chilies
4 teaspoon sesame seeds
3 teaspoon mustard oil
1 teaspoon red chilli powder
1 teaspoon turmeric powder
1 tablespoon coriander leaves, chopped
1 teaspoon fenugreek seeds
salt to taste

Instruction

Cut each boiled potato into 1 inch cubes. Heat the sesame seeds in a hot pan until hot, set aside until cooled down. Make a thick paste of the sesame seeds by grinding it and mix well with potatoes. Add salt, coriander leaves, red chilli powder and lemon juice and keep this aside. 


Heat mustard oil in a pan and add fenugreek seeds, turmeric powder, green chillies and fry until the fenugreek seeds turn brown, pour all contents into the potato mixture and mix well.

Garnish with coriander leaves and serve with rice or roti.
